TravelBeib's Chicken Parmigiana Recipe

What is Chicken Parmigiana? Chicken parmigiana is an Italian dish that uses chicken fillet as its base. The model is like chicken geprek. Both use wheat flour. The difference is, if geprek use chili sauce. While parmigiana is the name of the sauce that is poured on top chicken parmigiana. For more details, please read disini. Because basically I'm just an eater who likes to cook, not a chef. Afraid of giving the wrong explanation hehe.


First time eating Chicken Parmigiana


Not many people know the chicken parmiagana menu. Because this chicken is not as popular as pizza, spaghetti or ravioli. I even knew it when I was on vacation in Italy for a week. So the story is that I was walking near the Trevi fountain area, then I got hungry. Then I accidentally found a restaurant that had a Recommended On TripAdvisor sticker in front of the door. It is said that if there is a sticker it is certain that the food is delicious. Because of curiosity mixed with hunger, my husband and I finally entered the restaurant. Then tried the chicken parmigiana for the first time and it was really good.


Unfortunately, there are not many authentic Italian food restaurants in Jakarta. Even if there are, they are expensive. It's not worth it to pay 100,000 (plus and minus) just for a portion of pasta. Better save the money to go to Italy again, right?


Well from yesterday, I suddenly had cravings for Italian food that was really Italiano. So much cravings that I had to googling chicken parmigiana recipes on Pinterest and some chef recipes from abroad. So in conclusion Beib, the key to getting authentic Italian taste is in fresh cherry tomatoes and basil leaves. After reading, shadowing and looking at the recipe. Here I present the TravelBeib-style quick cooking method.

Resep Chicken Parmigiana

TravelBeib's Chicken Parmigiana Recipe

Materials required for 4-5 pax:

  1. Chicken fillet 500gr

  2. Basil leaves 5-8 pieces, buy at the food hall, one pack is 5 thousand.

  3. Garlic 5-6 cloves, thinly sliced

  4. Parsley leaves 1 tsp, can be fresh or dried

  5. Onion 1 piece, finely sliced

  6. Cherry tomatoes 2 packs, bought at the food hall 1 pack is 16k.

  7. Kobe Super Crispy Flour 1 pack for chicken flour

  8. Mozzarella cheese 4 slice

  9. Parmesan cheese (optional)

  10. Olive oil 3 sdt

  11. Sea salt (regular salt works too) and black pepper to taste

  12. Pasta, rice or salad

How to make it:


Chicken


Step 1 - Wash the chicken thoroughly. Mix (marinade) with salt and pepper. Let it sit for 15-30 minutes.

Step 2 - After the chicken is marinated, mix it with flour. The original plan was to use crushed cornflakes instead of flour. It turned out that the cornflakes were already soft, so I had to use Kobe flour.While waiting for the marinade. Wash the tomatoes thoroughly. Then blend until smooth. You can mix in oregano, salt and pepper to taste.

Step 3 - Fry the chicken.


Parmigiana Sauce


Step 4 – Wash the tomatoes thoroughly. Blend until smooth.

Step 5 – Sauté onion and garlic until fragrant.

Step 6 – Add the basil leaves. Stir.

Step 7 – Add the blended tomatoes. Add more basil leaves (sexual taste). Then stir until evenly distributed.

Step 8 – Add sea salt and pepper to taste. Let stand for 10 minutes to simmer.

Step 9 – Voilaaaa. Parmigiana sauce is ready.


Chicken Parmigiana

  1. Prepare the pasta that has been boiled. Pour parmigiana sauce to taste.

  2. Put the chicken on top along with the mozzarella. Place in the microwave for 2 minutes until the cheese melts.

  3. Chicken parmigiana is ready to eat with pasta, salad and homemade garlic buns. For the buns, I used burger buns spread with butter and garlic, then toasted.
